SPANISH TORTILLA
Prep: 10 minutes / Cook: 5 minutes / Broil: 3 minutes / Yield: 4 servings
Ingredients:
6 eggs
1 (5-ounce) bag high-end potato chips (such as Terra Chips), slightly crushed
1 large tomato, seeded and finely chopped (3/4 cup)
½ of a yellow sweet pepper, finely chopped (1/3 cup)
3 tablespoons chopped green onion
1 tablespoon vegetable oil
Directions:
Preheat the broiler. In a large bowl beat the eggs. Add the chips, tomato, sweet pepper, and green onion. Let stand for 5 to 10 minutes or until the chips have softened.
In a broiler-safe nonstick skillet heat the oil over medium-low heat. Add the egg mixture; cook slowly for 5 to 6 minutes or until the edges are cooked and pull away from the sides of the pan.
Transfer pan to the broiler; broil for 3 to 4 minutes until the eggs are set and lightly browned. Remove from the oven. Run a heatproof plastic spatula around the edges to loosen the tortilla. Let stand for a few minutes before- serving.
